Actually, there is an optimum number of tables to play, and it depends on the player. Consider a pro who plays one table and earns $40 an hour. If he playes 4 tables he might do worse than that on each table but if he only earns $15 per table, combined he will earn $60 an hour. So he makes more money overall. His play may be worse on each table but he's making more money! Over time, he will find the best balance for the optimum number of tables to play. That's why they multi-table, because it increases their expected win rate overall.
